This easy, 15-minute saffron rice is one of our go-to side dishes—simple to make, full of flavor, and perfect for any Mediterranean-style meal.

Ingredients

  • 1½ cups basmati rice
  • 1/16 teaspoon saffron powder or 10 saffron strands
  • ¼ cup hot water
  • 2 tablespoons olive oil
  • 1 small onion
  • 2 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon salt
  • 4 wedges lemon or lime for serving

Instructions

  • Prep – Soak 1/16 teaspoon saffron powder in ¼ cup hot water. Finely chop 1 small onion.

  • Cook Onion & Rice – Heat 2 tablespoons olive oil in a pot, sauté onion until soft (4 min). Add 1½ cups basmati rice and toast 1 min.

  • Simmer – Add saffron water, 2 cups vegetable broth, 1 bay leaf, and 1 teaspoon salt. Stir, bring to a boil, then cover and simmer 10–12 min.

  • Rest & Serve – Let sit 5 min off heat. Fluff with a fork, discard bay leaf, and serve with 4 wedges lemon or lime.

Notes

SUBSTITUTIONS
  • Basmati rice: Fluffy and aromatic. Jasmine works too—just a bit stickier.
  • Saffron: Soak strands or powder in hot water. Turmeric adds color, not the same flavor.
  • Hot water: Blooms the saffron. Use warm broth for a deeper, savory touch.
  • Olive oil: Adds richness. Swap with butter or ghee for a Persian-style twist.
  • Onion: Use yellow or white. Shallots or leeks for a gentler flavor.
  • Vegetable broth: Adds depth. Sub with chicken broth or water + bouillon.
  • Bay leaf: Optional, but adds subtle herbal flavor. Thyme or cinnamon also work.
  • Salt: Adjust based on your broth—taste as you go.
TIPS
  • No rinsing needed: Supermarket basmati is ready to go—rinsing risks soggy rice.
  • Bloom the saffron: Soak in hot (not boiling) water to unlock color and aroma.
  • Use real saffron: Look for deep red threads and a strong floral scent—skip the cheap stuff.
  • Toast the rice: Adds flavor and keeps the grains from sticking.
  • Heavy pot = better rice: Use a Dutch oven or thick-bottomed pan to prevent burning.
  • Let it rest: Keep the lid on for 5 minutes after cooking—steam finishes the job.
  • No peeking: Lifting the lid too soon lets out steam and ruins the texture.
  • Make ahead: Great for prep—reheat with a splash of broth for easy dinners.
  • Go crispy (optional): Cook a bit longer on low for a golden Persian-style crust.
  • Add brightness: Finish with lemon juice or fresh herbs for extra pop.
STORAGE
Store cooled saffron rice in an airtight container in the fridge for up to 4 days, or freeze for up to 1 month.
