This chicken gyros is an easy sheet pan dinner with Greek yogurt marinade and roasted onions. Serve gyros with pita bread, tzatziki and crumbled feta.

Introduction
Louise and I are all about low-effort, maximum flavor chicken dinners, especially when they come with a Mediterranean vibe. This sheet pan chicken gyro recipe checks all the boxes: bold flavors, juicy chicken meat, and it cooks in less than 30 minutes.
Whip up a quick spiced Greek yogurt marinade, toss it with the chicken pieces, sliced bell peppers, onions, and roast. Twenty minutes in the oven, five under the broiler for a golden char – and you're ready to serve this sheet pan dinner.
We usually serve it up with french fries, pita bread, and a quick tzatziki sauce. My eat-like-a-Greek tip is to stuff the fries into the pita (like I did when I was island-hopping through Greece back in 2011).
Add a squeeze of lemon, crumbled feta, and fresh herbs, and you've got a plate that’ll take you straight to Greece.

Ingredients
- Chicken: boneless skinless chicken breasts or thighs.
- Onion and bell pepper: for added flavor.
- Extra virgin olive oil
- Greek yogurt
- Lemon and garlic
- Spices: we use paprika, cumin, and coriander.
- Herbs: dried oregano, fresh mint and parsley/cilantro.
- Serves well with: flatbread such as pita, lemon juice, pomegranate seeds, tzatziki sauce, pickled onions, feta cheese, and french fries.
How to make it

1. Preheat – Set your oven to 430°F (220°C) and let it fully preheat.
2. Make the Marinade – In a bowl, whisk together Greek yogurt, olive oil, lemon juice, lemon zest, paprika, cumin, coriander, dried oregano, salt, and black pepper until smooth and well combined.
3. Prep the Chicken – Cut the chicken into bite-sized chunks, big enough to stay juicy. Toss thoroughly in the marinade, ensuring every piece is well coated.
4. Bake – On a baking sheet, scatter chopped bell peppers and thinly sliced onions in an even layer. Arrange the marinated chicken pieces on top. Bake for about 20 minutes, or until nearly cooked through.
5. Broil to Finish – Switch the oven to broil. Let the chicken broil for 5 to 10 minutes, until nicely charred on top with crispy edges.
6. Assemble and Serve – Grab some warm flatbread. Spread a generous layer of tzatziki, pile on the chicken, then top with crumbled feta, pomegranate seeds, pickled red onions, French fries, a squeeze of lemon juice, and a sprinkle of fresh herbs.

Tips
- Serve with your favorite Mediterranean spreads. I highly recommend garlic sauce, tzatziki, aioli, or feta dressing.
- Broiler function for 5 - 10 minutes to get the chicken nicely charred.
