The Easiest Flatbread Recipe
This is the flatbread we make whenever we run out of breadโand honestly, we love it more than most loaves. Inspired by Italian piadina, itโs soft, foldable, and cooks in just minutes on a hot pan. No yeast, no fancy ingredientsโjust flour, water, olive oil, salt, and baking soda.
Itโs super versatile too. You can fill it with cheese and cured meats, serve it with grilled veggies and meat, or use it to scoop up a warm curry or stew. Itโs a bit like Indian roti, a bit like Mexican tortillasโbut with that Italian touch we love.

How to Make Flatbread Without Yeast
1. Mix the Dough
In a large bowl, combine 3 cups (450 g) flour, ยฝ teaspoon baking soda, and 1ยฝ teaspoons salt. Add 1 cup (240 g) water and 3 tablespoons olive oil, then stir with a wooden spoon until the dough starts to come together.

2. Knead & Rest
Transfer the dough to a lightly floured surface and knead for about 3 minutes, until smooth, soft, and elastic (but not sticky - dust with more flour if it is).
Cut the dough into 6 to 8 equal pieces and roll into balls. Cover the dough balls with a damp cloth or plastic wrap and let them rest for 30 minutes to relax the glutenโthis makes rolling easier.

3. Roll & Cook
While the dough rests, heat a skillet or griddle over medium-high heat. Take one ball at a time, flatten it gently with your hands, then roll it out into a very thin circleโabout 2 mm thick.
Place the rolled dough onto the hot skillet. Cook for 2โ3 minutes, rotating slightly with your hand or a spatula for even browning.
Flip and cook the other side for another minute, until golden and lightly charred. Transfer to a plate or board and keep warm under a towel. Repeat with the remaining dough, stacking the flatbreads as you go.

5. Serve Warm
Stack the cooked flatbreads and cover them with a clean towel to keep warm and soft. Serve them with cheese, cured meats, grilled veggies, dips, or your favorite stew or curry.
Nicoโs Serving Tip:
While the flatbread is still warm in the skillet, spread a layer of stracchino (or cream cheese) over one half. Add a few slices of prosciutto and a big handful of fresh arugula. Fold it in half right there in the panโwarm, melty, and ready to eat. Itโs our go-to lunch in Todi!

Tips
- Use warm water: Warm (not hot) water helps the dough come together more easily and makes it easier to knead. Cold water can make the dough stiff, while hot water can cook itโso aim for just above room temp.
- Rest the dough: Even without yeast, resting is key. A 30-minute rest allows the gluten to relax, which makes the dough much easier to roll out thin without it springing back.
- Donโt skip the oil (or lard): Olive oil gives the flatbread flavor and flexibility. If you want a more traditional Romagna-style piadina, try using lard or even butter for a richer texture.
- Keep it thin: Roll your dough out to about 2โ3 mm thickโthinner dough cooks faster, gets those beautiful bubbles, and stays soft enough to fold or wrap.
- Preheat your pan well: Your skillet or griddle needs to be properly hot before the dough hits it. A hot surface ensures quick cooking, nice browning, and prevents the flatbread from drying out.
- Rotate while cooking: Gently rotate the flatbread as it cooks to avoid uneven browning. You can do this with your fingers or a spatulaโjust like Italians do with piadina on a testo.
- Stack and cover to keep warm: As you cook each one, stack them and cover with a clean kitchen towel. This keeps them soft, warm, and pliableโready to fold, stuff, or serve right away.

Yes! You can make the dough up to a day in advance. Wrap it tightly and store it in the fridge. Let it come to room temp before rolling.
Yes. You can replace part or all of the all-purpose flour with whole wheat flour. If you replace all of it you must add 2 to 4 tablespoons more water. Also, keep in mind that the flatbread will be a bit denser and drier.
If itโs sticky, add a little flour. If itโs dry or crumbly, add a splash of warm water. The dough should be soft, smooth, and easy to handle.
Baking soda helps the flatbread stay soft and light. You can skip it, but the result will be a little denser.
