The difference in taste and texture is hugeโsoft, warm, chewy pita with just the right puffโand it only takes a few pantry staples and a bit of time.
This Mediterranean flatbread is easy to make with or without a stand mixer. The dough comes together quickly, and the rest is just about proofing and heat. You can bake it in a home oven, on a pizza stone, or even in a cast iron skillet. Whether you want to dip it in hummus, wrap it around grilled meat, or build a pita bread sandwich, itโs one of the most useful flatbreads to know.

- Flour: All-purpose flour is best for texture. Substitute with bread flour for more chew or Italian 00 flour for lighter, fluffier pita. For a heartier taste, replace half with whole wheat flour and add more water. Want to experiment? Try mixing in spelt, semola, or rye. Use 1-to-1 gluten-free flour for a gluten-free pita bread โ though donโt expect the same puff.
- Yeast: Active dry or instant yeast works well. Weโve had good results with Caputo dry yeast, Red Star active dry, and Dr. Oetker instant. You can also use fresh yeast โ just triple the amount compared to dry yeast.
- Water: Use lukewarm water to activate the yeast. Too hot and itโll kill the yeast; too cold and it slows proofing. Aim for water that feels warm but not hot to the touch.
- Olive oil: Extra virgin olive oil makes the pita soft and pillowy โ ideal for stuffing like a Greek pita. If you prefer a firmer, chewier finish, skip the oil entirely.
- Sugar: A small amount helps kickstart the yeast and gives a slightly golden color. Skip it if youโre letting the dough proof slowly over time.
- Salt: Use sea salt or kosher salt to bring out the flavor. Omit only if youโre watching your sodium intake.

How to Make Pita Bread
Step 1: Make the Dough
In a small bowl, whisk together lukewarm water, sugar, and yeast until the mixture looks foamy. If it doesnโt foam after a couple of minutes, the yeast is likely dead โ start again with new yeast.
In a large mixing bowl, combine flour and salt. Pour in the foamy yeast mixture and stir with a spoon until it comes together into a rough dough. Add the olive oil and mix again. Transfer to a clean work surface and knead by hand for about 5 minutes until smooth and elastic. If it sticks, dust lightly with flour. Youโre done when the dough is soft, smooth, and slightly tacky.
Using a stand mixer? Use the dough hook on the second-lowest speed for 6 minutes.

Step 2: Let It Rise
Form the dough into a ball and place it in a large bowl brushed with olive oil. Rub a bit of oil on top too.
Cover with a plate, towel, or plastic wrap and let rise in a warm spot for 1 to 1ยฝ hours, or until doubled in size. A turned-off oven with the light on works great for this โ ideal for pillowy soft pita bread.

Step 3: Divide and Roll Out
After the dough has risen, turn it onto a clean surface. Cut into 10 equal pieces (about 80g or 2.8 oz each).
Shape each piece into a smooth ball and place on a floured baking tray. Cover with a damp kitchen towel and let rest for 10 minutes.
Then roll each ball into a 6-inch (15 cm) circle, about ยผ inch (5 mm) thick. Cover again and let them rest for another 20 minutes.

Step 4: Cook the Pita
Oven method (best for puffing): Preheat your oven to 480ยฐF (250ยฐC). If using a pizza stone, let it heat up for 30 minutes on the center rack. If not, use an upside-down baking sheet. Place 1 or 2 pitas, flipped upside down, directly on the hot surface. Bake for 3 minutes or until puffed and lightly golden. Avoid overbaking โ theyโll lose that classic softness.
Skillet method (no oven needed): Heat a cast iron skillet over medium-high. Cook one pita at a time, about 2 minutes per side, until golden spots appear. Note: They likely wonโt puff fully, but theyโre still perfect for pita bread sandwiches or dipping.
Wrap baked pitas in a clean kitchen towel while you finish the batch. This traps steam and keeps them soft. Now youโve got a stack of warm, homemade pita โ perfect for stuffing, dipping, or turning into flatbread pizzas.

Tips
- Use a digital scale: Measuring by weight is more accurate than using cups, especially for flour and water. This ensures consistent results every time.
- Make sure your yeast is active: The yeast should dissolve and foam within a couple of minutes when mixed with lukewarm water and sugar. If not, start over โ old or inactive yeast means flat pitas.
- Knead until smooth: Whether by hand or stand mixer, knead until the dough is soft, elastic, and no longer sticky. This helps develop the gluten for better puffing.
- Let the dough proof in a warm spot: A turned-off oven with the light on creates a cozy environment that helps the dough rise faster and more evenly.
- Roll evenly and rest the discs: Roll each dough ball to about ยผ inch thick โ not thinner. Then let them rest under a damp towel for 15โ20 minutes before baking. This relaxes the gluten and helps with puffing.
- Use a hot oven or pizza stone: High heat is essential for steam to form inside the dough, which is what makes that magical pocket. For Greek pita without a pocket, you can cook at a slightly lower temp and press the dough slightly thinner.
- Flip the pita before baking: Placing the rolled dough upside down (rested side down) on the hot surface helps with better puffing.
- Donโt overbake: Once they puff and get light golden spots, pull them out. Overbaking dries them out and makes them stiff instead of soft.
- Keep them wrapped: As soon as each pita comes out of the oven, wrap it in a clean kitchen towel to trap steam and keep it soft.
- Skillet method is great in a pinch: If you donโt have an oven, a hot cast iron skillet works too. They might not puff fully, but youโll still have delicious, chewy Mediterranean flatbread for dipping and stuffing.

This is the #1 question we get. Pitas need intense, even heat to puff โ thatโs how the pocket forms. Make sure your oven (or pizza stone) is fully preheated, the dough is rolled evenly to about ยผ inch thick, and that the dough has rested before baking. If itโs too thick, too thin, or under-proofed, it might not puff.
Yes! Just use an upside-down baking sheet and preheat it with your oven. It works almost as well and still gives you that nice pocket if your dough is right.
Absolutely. While you may not get the same full puff as in the oven, skillet pitas are still soft and flavorful. Theyโre great for dipping or folding into wraps. Just make sure your skillet is hot โ cast iron works best.
